I just got back from a 5 day trip to Walt Disney World yesterday and this was one of the beautiful pictures I took during the Wishes fireworks show at the Magic Kingdom. I want to go back already!
If you are anything like me, you are a sucker for snacks. No, not just any snacks. CHIPS. I am obsessed with chips of all kinds..the crunch and crisp is hard to give up, which is why no matter what diet you are on...you won't have to! Check out these awesome and healthy alternatives to the classic fried chip and mix up your crunchy snacks a bit ;)

With the forecasts predicting colossal snow fall for last night into this morning, it was clear that no one was going anywhere for a Friday night out. So...what better way to celebrate a night caved in than a delicious roast beef dinner?? Here is the recipe for
Hot Roast Beef with Crispy Rosemary Potatoes
2.5 lbs beef round top roast, boneless
First, coat your deep baking dish (where you will cook the meat) with a thin layer of olive oil. Coat the meat on all sides with the oil, then season all sides with a generous coating of salt, pepper, and garlic salt. Place in the oven at 350 degrees for about 90 minutes.
Now take your russet baking potatoes and cut them into thick squares.
Coat the dish with the potatoes with olive oil, and mix all potatoes so they are coated with oil. Sprinkle salt, pepper, and rosemary over the potatoes, to taste. Place them in the oven while the meat is cooking until they are nicely browned and crispy (I put the broiler on for a few minutes to give them a little extra crisp on top!).
For an additional side, mix together carrots, onions, olive oil, salt, and pepper. Toss them in a bowl, and then pour them into the same pan that the meat is cooking in so they can add flavor to the meat and the juices from the beat can add flavor to this delicious side.
Potatoes when they are done...so beautifully crisped!

With the Super Bowl around the corner, all I keep thinking is....what kind of awesome munchies am I going to make that won't keep me slaving over the oven or cutting board for hours?? Well here is a perfect solution! Cut your own mini pizzas out of a pre-made Boboli crust, and top it with whatever your heart desires. Please the whole crowd with personalized toppings for this extremely easy recipe!
What You Need
Boboli pre-made crust, cut into small circles
These ingredients are just for a basic cheese mini pizza. You can also make variations of other kinds of pizza you like. Add some pepperoni, mushrooms, etc. The other two variations I made are buffalo chicken mini pizza and margherita mini pizza. For the buffalo chicken pizza, I just put spread ranch (instead of pizza sauce) and topped it with chicken, Frank's red hot, and monterey jack cheese. For the margherita, I used tomato slices and cubed mozzarella. The recipe for the regular pizza is as simple as spreading the sauce, topping with sprinkled mozzarella, basil, and oregano, and bake according to crust instructions. Such an easy Super Bowl treat!
