Recipe: Tomato Avocado Grilled Cheese!

I was just craving a nice, somewhat healthy, easy, BUT different lunch.  Turkey sandwiches are getting old, and so instead I put together a combination of a tomato avocado salad and a grilled cheese.  The verdict: Deliciously bright and awesome for a simple yet decadent lunch!


Ingredients:
2 pieces of whole wheat bread
1/2 of an avocado
Tomatoes of your choice (I used Cherubs)
2 slices cheese of your choice (I used muenster)
Cilantro leaves
Onion salt (or regular salt)
Lime juice
Butter

Ingredients

Wash your tomatoes before you cut them in smaller pieces!

Chopped tomatoes and the avocados ready to dice!

An easy way to dice avocados: Cut while in the skin and flip inside out!

Toss tomatoes and avocado in a bowl and add cilantro and onion salt (or regular salt) to taste.

Add a few squirts of lime juice!

Butter one side of each slice of bread--make sure not to rip the bread when spreading!

Melt butter over medium heat in a frying pan.

Place bread in frying pan, butter side down!

Place one piece of cheese on each slice of bread.

Add your tomato/avocado mixture to one side.

With a spatula, flip the bread with cheese only onto the top of the sandwich.

Let each side brown to your liking! Be careful when flipping not to lose too much of the tomato/avocado salad!

Ready to serve!  And more importantly, READY TO EAT!
